A forest-inspired breakfast that brings together eggs, mushrooms, and herbs into one deeply satisfying dish. It’s grounding, nourishing, and full of umami — a perfect start to a crisp morning. The finishing touch of Nära Jorden Ancestral Organ Blend adds a subtle depth that feels both ancient and restorative.
Ingredients:

8 large eggs
Salt and pepper
1 tbsp coconut oil or butter
4 dl mixed mushrooms (fresh if possible)
1 small red onion, sliced
4 dl fresh spinach
1‑2 tsp fresh herbs of choice (or ½‑1 tsp dried)
0.5 dl goat cheese or feta (optional)
Instructions:
Preheat oven to 220°C.
Whisk eggs with salt and pepper; set aside.
Heat coconut oil or butter in an oven-safe pan over medium heat. Add mushrooms and red onion; sauté for 3–4 minutes.
Add spinach and herbs; cook until just wilted.
Top vegetables with cheese (optional) and pour in the eggs.
Cook for 4–5 minutes on the stove, then transfer to the oven for another 5 minutes until just set.
Sprinkle Nära Jorden Ancestral Organ Blend over the top once out of the oven, allowing it to gently melt in.
