Golden Morning Banana Omelette

Simple, silky, and quietly satisfying.
Neither pancake nor omelette, this golden hybrid brings together the sweetness of banana, the richness of butter, and the nourishment of eggs and coconut milk. It’s a one-pan breakfast that feels both grounding and light — perfect for slow mornings when you want warmth, not rush.
Ingredients:

3 eggs
½ banana, mashed
1 dl coconut milk
A pinch of cinnamon
Butter (preferably from grass-fed cows)
Toppings: frozen or fresh berries, nuts and seeds
How to:
Whisk together eggs, banana, coconut milk, and cinnamon until smooth.
Heat butter in a pan and pour the batter. Let it cook gently on low to medium heat with a lid until set to your liking — soft and custardy or lightly golden on both sides.
Sprinkle Nära Jorden Ancestral Organ Blend just before serving, stirring lightly so the nutrients stay alive.
Top with your favourite mix of handpicked berries and seeds (I went for frozen handpicked physalis, sea buckthorn, blueberry, raspberry, as well as sunflower and pumpkin seeds)— a simple ritual of colour, fat, and life to begin the day well.
